Ingredients
- 1 lb chicken breast, cute into 1 inch pieces
- 1 lb chicken thighs, boneless, cut into 1 inch pieces
- 1/4 cups olive oil
- 1 onion, chopped
- 1 bell pepper, green, chopped
- 1 cups celery, chopped
- 14.5 oz tomatoes, canned, diced
- 1 cups chicken broth
- 6 oz tomato paste
- 1/4 tsp black pepper
- 1/2 tsp salt
- 1/2 tsp basil, dried
- 1/2 tsp oregano, dried
- 1/2 tsp thyme, dried
- 1/2 tsp garlic, minced or pressed

Prep
- Chop onion, pepper, celery, mince garlic
- Cut up chicken both breast and thighs,, wash hands thoroughly
Make
- Sauté chicken pieces in the oil until no longer pink. Remove and keep warm. In the same skillet, sauté the onion, green pepper, and celery in the remaining oil until tender. Stir in the tomatoes, broth, tomato paste, and seasonings.
- Bring to a boil, reduce heat; cover and simmer for 5 minutes. Return chicken to the pan; heat through.
